Nachos Loaded with Charred Corn, Spicy Jalapeños, and Black Beans Delight!

Enjoy a simple yet flavorful snack or sharing dish with these charred corn and black bean nachos. This recipe combines crispy tortilla chips with melted cheese, smoky charred corn, seasoned black beans, and fresh jalapeños, providing a delicious treat that is easy to personalize. You can easily enhance the dish with ingredients such as tomatoes, avocado, or additional spices to suit your taste.

Start by preparing two ears of corn. Remove the kernels and cook them in a large frying pan over high heat for five to ten minutes, stirring occasionally until they achieve a deep char. Once done, transfer the corn to a large bowl. Using the same pan, add two tablespoons of vegetable oil, followed by 200 grams of drained and rinsed canned black beans and half a teaspoon of lightly crushed cumin seeds. Season the mixture with sea salt and freshly ground black pepper, cooking over high heat for about five minutes until the beans become slightly crisp and start to pop.

Combine the cooked beans with the charred corn in the bowl. Finely grate the zest of one lime over the mixture, then squeeze in the juice of one and a half limes. Stir in most of the chopped fresh coriander (half a bunch) and two deseeded and finely chopped jalapeños. Toss the mixture well and adjust the seasoning with more lime juice, salt, or pepper if necessary.

Preheat the grill to high. Spread 200 grams of tortilla chips evenly on a baking tray, then sprinkle 75 grams of grated mozzarella and 100 grams of grated mature cheddar over them. Place the tray under the grill for a few minutes, watching carefully until the cheese is melted and bubbly, ensuring that neither the chips nor the cheese burn.

Once the nachos are ready, transfer them to a serving platter. Spoon the charred corn and black bean mixture over the cheesy chips and add small dollops of sour cream. Garnish with the remaining coriander and chopped jalapeños. Serve immediately for a delightful and satisfying snack. For added freshness, consider incorporating diced ripe tomatoes or guacamole, and for more depth of flavor, try adding smoked paprika, crushed coriander seeds, or other favorite spices to the beans.
